Tasting notes

Warm sweet notes in the aromas such as cherry and vanilla-spiced applewood. The flavors have a hint of olive with a touch of huckleberry and plum. In the mouth, the wine is rich and textured and it finishes with lively acid and tannins. 

Production notes

Hand harvested. Fermented in 1 ton bins with 3 punch-downs per day. 10% of batches native yeast fermentation. Bladder pressed after an average 7 days of skin contact. Malolactic fermentation in barrel. 20 months of barrel aging in 2nd and 3rd use barrels of French and American origin, 30% new. Bottled in June 2017.  

Other notes

We love this wine with roasted meats - frankly, anything you cook over an open flame will pair really well with this Tempranillo.  Think BBQ spare ribs or Korean BBQ....just get your food over the fire and open this bottle! 

When to Drink

During the first year, decant for an hour and then enjoy.  While approachable early in its life, this wine will continue to evolve beautifully over the next 5-25 years.
