2016 Straw Viognier



"This delicious dessert wine is classified as a 'Straw Wine' which means we turned the grapes partially to raisins either on the vine or scattered on the vineyard ground.  Our wine turned out intensely aromatic and flavorful, yet with so much natural acidity that the finish is clean and delightful. This wine is dessert all by itself, we recommend capping the night off with this wine and a summer sky full of stars, a crackling fireplace or a table of friends."

The 2016 vintage was a warm, gentle season, unusually long for the Snake River Valley, with a cool fall. The spring started early and warm, the summer was gentle with lots of days in the 90’s but few over 100 degrees F. September cooled down significantly, allowing the grapes to ripen slowly and the winemaker to pick at exactly the optimal time for the style desired. The yield was ample enough to merit thinning the crop to leave only the best clusters. The white wines are elegant with lively, balanced acids and the reds are intensely fruity with long, textured finishes. 3100 growing degree days

Tasting notes

The aromas remind us of opening Grandma's jar of fresh canned peaches.  You'll also find flavors of honeysuckle and rose petal. 

Production notes

As the grapes reached about 23 brix in September, the leaves around the grape clusters were removed from the vine, leaving the clusters exposed to full sunlight. The grapes were dried on the vine for eight weeks to intensify sugars. On November 8, 2016 the grapes were picked and pressed at 32 brix.  Pressing took 24 hours to complete.  Fermentation took place in stainless steel barrels over four weeks.  Fermentation was arrested at 9% alcohol. Wine was filtered and bottled in June 2017.
