2015 Laissez Faire White Wine

The 2015 vintage was not only our 10th anniversary harvest, but also Idaho's 2nd hottest year on record. This resulted in an early harvest for this milestone vintage, with our first fruit coming into the winery the last week of August, and getting our average heat accumulation to 3405. The Snake River Valley started cooling off around mid-September, which helped develop flavors. Yields were small due to a 2014 November freeze, and cold weather during bud-break in April. We can certainly say that Mother Nature threw us a curveball of conditions as the growing season presented itself quicker, with budbreak in early to mid-April, gradual warming in May with temperature spikes in June. July and August were relatively tame, before cooling off to the 70’s and 80’s for September and October. These conditions created highly aromatic whites, and mature, flavorful reds. Mother Nature gave us a few grey hairs in 2015 but what she served us in the end was worth it!

Tasting notes

The Laissez Faire White wine is a proprietary blend of Sauvignon Blanc and other grape varieties, chosen and fermented to emphasize crisp, fresh fruit styles for everyday drinking.  The aromas are a fresh mix of lemon peel, tart green apple, with a hint of flower blossom and green grass.  Texture is medium bodied in the mouth and the finish is long, with bright, lingering acidity.  Flavors echo the aromas with Granny Smith apple, grapefruit and key lime pie. 

Production notes

Laissez Faire is just what its name implies, a “let it be” wine in terms of winemaking and drinking style.  Fermented slowly in stainless steel tanks at low temperatures for 1 month.  Settled for 3 months prior to filtration and bottling in January.  Use of stainless steel and quick bottling preserve the freshest fruit aromas and flavors. Proprietary blend of white wine varieties used.

Other notes

This wine is sophisticated enough to serve with a formal meal but light enough to pair with casual meals.  Will taste delightful well-chilled on a hot summer day with grilled food or fresh summer meals.  Will act as a refreshing counterpoint to heavier foods in the winter.  Some of our favorite pairings are tomato and basil pasta, fish tacos and shrimp salad.
